My collection contains a mixture of armed and unarmed zombies - while under many rulesets zombies are not equipped with weapons, I don't see zombies carrying weapons as a problem - I merely rule that the zombies are such poor fighters that being armed makes no difference to their attacks, they can't really use the weapons to any great effect.
I terms of purely visual appeal I like to see zombies crudely clutching at the weapons, tools or other things they might have used in life. Former-peasant zombies carrying farm tools, buckets and so on makes for a cool image when used as encounter, I like little reminders that the undead monsters attacking you were once humans, not so different from yourself - to me that is part of the horror of zombies, the fact they are not just monsters, they used to be people
