Plenty of games use 'Armour Class', 'Armour Points' and similar term, not just D&D. I can see why you might not want that for your game though. I suppose you could call it Agility then, but that is still misleading - dodge could work I guess, I know it's a difficult concept to get across  but 'Dexterity' is not the right term ... 'Target Rating' could work
